On Monday, the boy cooked super-veggie-filled vegan lasagna despite his very long day. He even took a couple of pictures!
The lasagna, pre-cooking. It was very good and had layers of tofu ricotta, eggplant, mushrooms, spinach, and a weird cheesy nooch sauce we made up on the fly so we wouldn't have to make more tofu ricotta. I was grouchy since we didn't have dinner until after 9pm but it was worth it...so tasty.
